6oz wild-caught canned or pouched salmon
1 egg, whisked
1 TBSP mayo (optional)
½ TBSP dijon mustard
1 TBSP fresh herbs (option, dill is great though)
½ teaspoon garlic powder
½ teaspoon onion powder
2 TBSP almond flour
⅛ teaspoon salt
1 TBSP coconut oil or avocado oil
In a medium bowl, combine salmon, almond flour, egg, mayo, mustard, herbs, garlic powder, and onion powder together. Stir until well combined and the salmon is shredded.
Drizzle oil, or use spray oil, on a preheated pan over medium heat. Scoop mixture onto the pan (you can use a cookie scooper for this) and press mixture down with a fork to form patties. Cook for 2-3 minutes per side, or until golden brown.
You can eat these plain, with your favorite sauce, or throw them on a salad for a quick lunch idea!
