It’s time for that fabulous season we all love in Wisconsin – BBQs and tailgating. Looking for a healthier option to accompany your grilled favorites? Try this yummy Kale Quinoa Salad!
Ingredients:
1 cup raw almonds – chopped in a food processor or thinly sliced
1 bunch of kale chopped finely
1 cup craisins
1 cup cooked quinoa
1:2 ratio of lemon juice and olive oil
Instructions:
In a mason jar, 1:2 ratio of lemon juice to olive oil. Add salt and pepper to taste. Shake it until well combined. After the dressing is well combined, add in the kale, craisins, almonds, and quinoa and mix.
Serve and enjoy! This salad goes great as a side at any tailgate, BBQ or picnic.
