With the holiday season coming to a close, get back in the routine of healthy eating with these delicious blueberry muffins. Make a batch or two ahead and freeze so you have for those busy mornings.
Greek Yogurt and Honey Blueberry Muffins
Ingredients:
2 cups Blueberries
½ cup Almond milk
2 Large eggs
¼ cup Honey
1 tbsp Baking powder
½ tsp Cinnamon
⅓ cup Coconut sugar (can use regular sugar)
½ tsp Salt
1 tsp Vanilla Extract
2 cups Whole wheat flour
½ cup Olive or coconut oil
1 cup Greek yogurt
Directions:
Preheat oven to 400 degrees
Line a 12 cup muffin tin with paper liners, set aside
In a large bowl whisk together flour, sugar, baking powder, salt and cinnamon; set aside
In a medium bowl whisk together the yogurt, milk, vanilla, eggs, and honey.
Gently fold the wet mixture into the flour mixture, fold until combined.
Fold in the oil and then the blueberries. Be sure not to over mix!
Divide the batter evenly among the prepared muffin tin.
Bake for 16-18 minutes.
Allow the muffins to cool for 5 minutes before removing.
