Physical Therapy Corner: Caring for Pulled Muscles

Ingredients:
– Crust –
1 cup of cooked cauliflower
½ cup grated parmesan cheese
1 egg, beaten
1 tsp Italian seasoning
½ tsp garlic
½ tsp salt
– Toppings –
½ cup shredded mozzarella cheese
Pizza sauce or pesto
Toppings of your choice (my favorite is pesto, chicken, spinach, sun dried tomatoes)
Directions:

Steam the cauliflower and cut into chunks and pulse in a food processor until it is rice-like consistency. Gently press out the excess water with a paper towel.

Preheat oven to 450 degrees

In a medium bowl, combine 1 cup riced cooked cauliflower, 1 egg, and parmesan cheese. Add the seasoning, crushed garlic, and salt.

Make sure everything is well mixed!

Form dough on a pizza pan making sure not to press too thin.

Bake dough for 15 minutes

Remove from the oven. Add sauce and toppings.

Put pizza back in the oven and heat until the cheese is melted!
