You can’t go wrong with this nutrient rich & satisfying dish. Pair with your favorite side for the perfect meal!
Ingredients:
4 (5oz) Salmon Filets
2 tsp olive oil
Salt and freshly ground pepper
3 chopped tomatoes
2 chopped shallots
2 tbs fresh lemon juice
1 tsp dried oregano
1 tsp dried thyme
Directions:
– Pre-heat oven to 400 degrees
– Sprinkle salmon with olive oil, salt and pepper
– Stir the tomatoes, shallots, lemon juice, oregano, thyme, salt and pepper in a medium bowl to blend
– Place a salmon fillet, oiled side down, atop a sheet of foil. Wrap ends of foil into spiral shape
– Spoon tomato mixture over salmon
– Fold sides of foil over covering completely
– Place foil on a large baking sheet
– Bake until salmon is cooked through (roughly 25 minutes)
